The other two causes for a bad bottle are easily fixed, though. The scent of burnt match,[link widoczny dla zalogowanych], is indicative of reduction,[link widoczny dla zalogowanych], i.e. problems with sulfur. Putting a couple of pennies into a decanter before pouring in the wine, may help to neutralize the sulfur, restoring the wine to a palatable state.
The final problem results from a compound called 2,[link widoczny dla zalogowanych],4,6-trichloroanisole,[link widoczny dla zalogowanych], or TCA. Only a tiny amount of this compound, which often results from interaction between chlorine and the cork, can ruin a bottle as it is distinguishable in parts per trillion. To fix it, simply line the inside of a bowl with saran wrap and pour the wine in the bowl. TCA will stick to the saran wrap, so that after 10 minutes you can simply serve the wine as usual.
Ever popped the cork on a bottle of wine to be greeted by a musty stench or sulfurous odor? Are guests on their way and you don’t have a backup bottle? Don’t panic! If you have just a bowl, a piece of saran wrap and a couple of pennies, you might be able to salvage the bottle.
These solutions won’t necessarily return the wine to its original quality, but will certainly make it more palatable. In any case, never be afraid to return a wine that displays any of these off-putting characteristics. The wine world can be intimidating, but you always deserve something you can enjoy when you buy a bottle.
There are four primary causes for a wine to turn bad inside the bottle; two of which cannot be fixed. Re-fermenting occurs when yeast continues to interact with the sugar in the wine, producing carbon dioxide. The wine will take on a fizzy quality and fungal smell. A wine that tastes like it has been left open for several days, on the other hand, is typical of bottle which has been oxidized or heat-damaged. In either of these scenarios,[link widoczny dla zalogowanych], there is nothing that can be done.
